Good evening everyone…and how was your Monday? I hope that you have had some good moments in your day…especially moments spent with Jesus!
Well…I survived the cook off for today…and I actually enjoyed it very much! After going out into my kitchen this morning, I prepped some food for dinner tonight because I thought that I just may not want to fix it this evening, after being on my feet all day. Then I made some of my great grandmother’s baked beans; that I’m going to let savor for Christmas dinner. From there, I made some ham roll-ups…and if you aren’t familiar with those…all you do is take some ham lunch meat and spread a combo of cream cheese and a little garlic power on the ham slices; then you place a green onion across it all and roll them up and put them in the fridge. Then after they have set overnight, you can slice them into little pinwheel appetizers, which Keith and I will have with our Christmas Eve party.
After I did a few things…I took my buddy…the walker, which I have now named “Charlie” and we went and took a break with Keith and had some lunch in the living room, where I rested my foot for a while.
Once lunch was finished and I had rested for a bit…I made this great low carb cheesecake…and I think it’s the best one I’ve ever made…and get this…the batter even tasted great! I did do something different though. Instead of taking the time to make a crust, I took some striped shortbread cookies and cut them in half...then I made a pinwheel design, in the bottom of my springform pan, with the chocolate side facing up…and then poured the cheesecake batter on top and baked it. As you can tell…it’s not all low carb…but the majority of it is…and it sure looks good!
After finishing all the fun cooking…Keith offered to do the dishes…which I did not turn down. From there, I took my foot bandage off and got cleaned up for the evening…and now I’m writing you. The foot is sore this evening; but that’s not what I’m focusing on. Instead, I’m focusing on a God, who has truly helped me, each step of the way…and I praise Him tonight, for ALL He has and is doing!!
One Bible verse that I have held close to my heart…through difficult times; is found in Isaiah 41:13, which reads… “For I the LORD thy God will hold thy right hand, saying unto thee, Fear not; I will help thee.”
You know…all we need to do, in time of need; is ask for God’s help and He will be there…for I know this without a doubt. In fact…before leaving my office this morning, I asked God to help me through all that I wanted to accomplish today…because I knew that I could not make it through the pain on my own. How many times are we going to try and lean on a broken circumstance; before we come to see that there is a God, who can be strength for us in time of need? We’re already hurting; so I don’t think we can afford a fall, on top of what we are already facing…right? So may I encourage us all tonight, to let God be our helper? In other words…let Him be the One, who can step in and be our strength, during times of weakness…for His strength will definitely take us way above these moments of weakness…believe me…I know!
Well…it’s been a long day; so I think I’ll get some dinner and relax for the evening…as I have some other things to do in the kitchen tomorrow. Please take care…and may the God of all peace be with you tonight! See ya tomorrow!
